Wine Profile
Tasting Notes
Lots of ripe strawberry and red cherry on the nose with a hint of mocha and baking spice. The palate is full of the same ripe strawberries and cherries, and there is also a hint of confectionary flavours as well. The tannins are well integrated with a soft acidity, and the medium finish has flavours that linger.
Vineyard Notes
The beginning of spring 2016 saw very hot temperatures, which brought an early start to the growing season. When the temperatures dropped later in the spring, there were some concerns over berry development. Our skilled and dedicated vineyard team was able to minimize the loss. The ensuing hot
summer days and cool evenings contributed to a great balance of fruit flavours and acidic notes in our whites, while the early start to the season allowed our reds to stay on the vine longer and develop a softer, delicate profile with well-rounded tannins.
Winemaker Notes
The grapes were allowed to cold soak for 2 days to help with the colour and flavour extraction. It was then fermented in open tank fermenters and punched down twice daily. The wine went through secondary ML fermentation and aged with French and American oak for 5 months.
Food Pairing Notes
Lemon-herbed salmon fillet grilled on a cedar plank, rosemary lamb chops, peppered pork ribs, BBQ vegetable or shrimp skewers, and wild mushroom risotto.
